Vegan Sticky Caramel Walnut Slice


Refined sugar free and loaded with protein. Sweet and gooey, this caramel slice is the perfect guilt free treat!

Ingredients:


Base

½ cup medjool dates pitted (approx. 6 large)

1 cup walnuts

½ cup LSA or almond meal

3 tbsp coconut oil (melted)


Caramel Filling

½ cup unhulled tahini

1 cup medjool dates pitted (approx. 12 large) soak in hot water for 5 minutes and reserve 2 tbsp of the water after draining.

Pinch sea salt

1 tsp vanilla extract


Chocolate Topping

¼ cup cacao powder

¼ cup coconut oil (melted)

1 tbsp maple syrup

Pinch sea salt

¼ cup chopped walnuts 


Instructions:


Method:

1. Line a square baking tin with oven proof paper.


2. Place the base ingredients into a food processor and pulse for approximately 10 seconds then transfer to baking tin and press into the tin. Transfer to the freezer.


3. Place the soaked dates, tahini, sea salt, vanilla extract, and reserved water from the dates into the food processor and pulse until the mixture is gooey. Remove the base from the freezer and spread the caramel filling over the base.


4. Mix the cacao powder, coconut oil, maple syrup and salt in a small bowl until well combined and pour over the slice. Spread the chocolate evenly with the back of a spoon and top with the chopped walnuts.


5. Place in the fridge to set for 2 hours or 20 minutes in the freezer.
